Specialty Livestock Marketing Study

Dr. Jill Hobbs and Ann Cooney of the Agricultural Economics Department of the University of Saskatchewan have been contracted to conduct a four-year study into enhancing marketing of specialty livestock (which includes white-tailed deer).

The researchers will study three main areas: marketing meat and value-added meat products; developing and marketing other value-added products; and agri-tourism opportunities.

The study will investigate appropriate slaughter facilities, including those approved to export to the European Union, determine product potential, and gather information on developing, processing and promoting end products. It will also look at how to produce consistent quality and quantity, and determine if a grading system is needed and how one can be established.

The team will also look at markets for non-meat products such as hides, velvet, oil, wool, horns, teeth and fiber. Agri-tourism opportunities will include hunt farms and vacation ranches.

The researchers hope to provide more information about market opportunities, the need for product traceability and accountability, and how to sustain markets after they are developed.
